1. Unir los ingredientes de la 1=B0 masa en un bol y comenzar a =
formarla, luego colocarla en la mesada y amasarla, sin romperla, hasta que =
quede bien lisa y sin grietas.
2. Una vez lista la pincelamos con un poco de aceite y la=
envolvemos en papel film.
3. Con la 2=B0 masa hacemos lo mismo y las guardamos en l=
a heladera hasta usarla.
4. Ahora podemos estirar las masas con la pastalinda o co=
n la ayuda del palo de amasar.
5. Las estiramos bien finitas y las espolvoreamos con bas=
tante harina.
6. Luego cortamos tiras con el cuchillo o con los cortant=
es de la pastalinda.
7. Mientras que los cortamos los ponemos al costado de la=
mesada con harina para que se sequen un poco. Mientras tanto ponemos una c=
acerola con agua a hervir, con un poco de sal.
8. Cuando cortamos todos los fideos los tiramos el el agu=
a y los dejamos que se cocinen por 2 minutos o hasta que los fideos comienc=
en a flotar.

Procesar la harina con los huevos. Retirar y unir con las=
manos. Formar un bollo, cubrirlo con film y reservar.

Relleno:=20
En un recipiente con manteca caliente agregar los shitake=
picados. Dejar sudar 5 minutos a fuego lento. Salar. Cocinar de 5 a 10 min=
utos. Incorporar el echalote picado y el caldo de ave. Cocinar de 25 a 30 m=
inutos a fuego m=EDnimo. Dejar enfriar.
Mezclar la preparaci=F3n anterior con la ricota. Incorpor=
ar el perejil y ciboulette picados. Salpimentar y colocar el relleno en una=
manga. Pasar la masa por la m=E1quina para hacer los fideos. Cortar del ta=
ma=F1o deseado. Rellenar con la manga y cerrar apretando los extremos.
Cocinar en agua hirviendo con sal de 5 a 6 minutos.

Para obtener la manteca clarificada fundir la manteca y r=
etirarle las impurezas. Con 120 g de manteca se obtienen 100 g de manteca c=

Masa:
Colocar la harina en la mesada formando una corona, En el=
centro mezclar los huevos, la tinta de calamar, el aceite de oliva y la sa=
l.
Ir mezclando los ingredientes hasta que se unan y quede u=
na masa lisa y el=E1stica.
Dejar reposar una hora, estirar y cortar cintas de dos cm=
de ancho.

Para la salsa:
Rehogar en aceite de oliva el ajo picado, y las berenjena=
s, agregar el tomate en concasse y la albahaca cortada en juliana, incorpor=
ar las aceitunas, las anchoas por la mitad y saltear.Agregar el pur=E9 de t=
omate en concasse, cocinar 5 minutos y condimentar.

Estirar la pasta con un palote. Cortar en franjas de 10 c=

- Cocinar las cintas en abundante agua con sal hasta que est=E9n=
al dente. Escurrirlas y mantenerlas al calor.=20

- Condimentar con sal y pimienta negra molida en el momen=

- Incorporar la crema liviana y el azafr=E1n. Revolver so=
bre llama suave hasta calentar, cuidando que no llegue a hervir.=20
- Retirar del fuego y volcar sobre la pasta caliente.
- Espolvorear con queso rallado a gusto antes de servir.

NOTA:
La pasta es una excelente fuente de hidratos de carbono c=
omplejos que aportan una energ=EDa sostenida y de liberaci=F3n lenta.
Si bien la pasta integral es m=E1s rica en fibras, minera=
les y vitaminas, conviene tener en cuenta que tambi=E9n la pasta elaborada =
con harina blanca es un alimento saludable.
Cabe se=F1alar que la pasta no engorda, salvo que se acom=
pa=F1e con salsas suculentas o quesos de alto contenido graso. Para cuidar =
la silueta y el equilibrio nutricional, lo ideal es servirla con salsas liv=
ianas a base de vegetales frescos, o con una peque=F1a cantidad de aceite y=
un toque de las hierbas arom=E1ticas que se prefieran; as=ED un plato apor=
ta menos calor=EDas que una porci=F3n de carne.

Sal de Hierbas:

Colocar en una procesadora la sal gruesa junto con las hi=
erbas congeladas. -Lograr que la preparaci=F3n quede de una manera entrefin=
a. Reservar.

Elaboraci=F3n de la masa:

Para obtener una buena masa utilizar las siguientes propo=
rciones: cada 100 g de harina colocar un huevo.
Colocar la harina en la procesadora colocar un huevo y 5 =
yemas. Luego incorporar 100 c.c. de agua con la sal fina para que se funda =
y agregar los hongos procesados. Amasar bien hasta que se forme una bola al=
rededor de la cuchilla. Luego envolverla en papel film y llevarla a la hela=
dera.

Para la salsa:

Filetear los champignones y dorarlos en una sart=E9n con =
manteca, agregar los echalotes y dejar que se vuelvan transparentes, aromat=
izar con pimienta negra en granos machacada. Luego incorporar el vermouth s=
eco o vino blanco.
Cuando se evapora el vermouth agregar la crema de leche y=
condimentar con sal y por =FAltimo agregarle unas lechugas por encima por =
unos segundos para que se calienten.=20

- En una cacerola amplia calentar abundante agua con sal y el ac=
eite de girasol. Cuando rompa el hervor, echar las cintas verdes. Cocinarla=
s hasta que est=E9n al dente.
- Un par de minutos antes de retirarlas, calentar 3 cucha=
radas de aceite de oliva en una sart=E9n, sobre llama suave. Agregar los to=
mates cortados en 4 cascos y la berenjena cortada en cubos. Peque=F1os. Coc=
inar brevemente. Apagar el fuego, perfumar con el or=E9gano y sazonar con s=
al y pimienta reci=E9n molida.=20
- Escurrir las cintas y colocarlas en una fuente. Esparci=
r arriba el blanco de puerro, rociar con el aceite de oliva restante y mezc=
lar bien.
- Agregar la preparaci=F3n de tomates y berenjena, con su=
jugo de cocci=F3n.=20
- Servir de inmediato.

NOTA:

El aceite que se incorporar al agua para la cocci=F3n de =
las pastas evita que se pequen entre s=ED.=20
Las berenjenas ayudan a bajar los niveles de colesterol y=
de tensi=F3n sangu=EDnea. Lo ideal es utilizar las blancas; son m=E1s suav=
es y no es necesario curarlas con sal para quitarles el gusto amargo caract=
er=EDstico.

Para los crepes: licuar los huevos, sal, aceite, leche y espinac=
as blanqueadas y escurridas. Incorporar la harina y reposar 30 min. tapada =
en la heladera. Armarlos en sart=E9n con roc=EDo vegetal. Arrollarlos y cor=
tarlos en tiras de =BD cm de ancho. Reservar hasta el momento de incorporar=
los a la salsa.

Para la salsa: picar la cebolla, ajo y pimiento, rallar l=
a zanahoria. Colocar los vegetales en recipiente apto para microondas con e=
l aceite, tapar y cocinar 8 min. en m=E1x. Retirar y agregar la carne, el p=
ur=E9 de tomates, el caldo u todos los condimentos. Cocinar destapado de 10=
a 12 min. en m=E1x. Revolviendo cada 5 min.
Volcar sobre los fideos de crepes. Espolvorear con queso =
rallado magro y gratinar en el horno. Espolvorear con perejil picado.

Elaboraci=F3n de pasta verde:

Procesar las hojas crudas de espinaca y agregarles un poc=
o de agua, sal y manteca. Procesar. Luego agregar los huevos y continuar pr=
ocesando, incorporar la harina y continuar amasando en la mesada. Dejar des=
cansar la masa de un d=EDa para el otro. Luego estirar la masa con el palot=
e. Para cortar los fideos llevar los bordes de la masa a la mitad, luego vo=
lver a doblar hacia adentro y cortar tiritas finitas.
Colgar los fideos para que se oreen. Tiempo de cocci=F3n =
30 segundos, en agua hirviendo con sal.

Elaboraci=F3n de la salsa:

En un sart=E9n colocar aceite de oliva con un poco de man=
teca, incorporarle el br=F3coli pre-cocido, las aceitunas cortadas, queso m=
ascarpone, la crema de leche y condimentar con sal a gusto. Agregarle a =FA=
ltimo momento los huevos de codorn=EDz y pimienta. Luego agregarle a la sal=
sa los fideos ya cocido.

- Calentar el aceite en una sart=E9n grande. Incorporar las cebo=
llas de verdeo, las zanahorias, las chauchas y el pimiento. Saltear todo ju=
nto a fuego moderado durante 5 minutos, mientras se mezcla con cuchara de m=
adera.
- Agregar el caldo y cocinar durante pocos minutos m=E1s,=
hasta que los vegetales est=E9n cocidos pero no blandos.
- Incorporar los champi=F1ones y cocinar s=F3lo un moment=
o.
- Condimentar a gusto con pimienta y salsa de soja.
- A=F1adir la crema liviana y calentar hasta que se funda=
, cuidando que no llegue a hervir.
- Hervir los fusilli en abundante agua salada hasta que e=
st=E9n al dente. Colar, salsear y espolvorear con queso rallado.

NOTA: La crema liviana se puede reemplazar por 50 gramos =
de crema de leche com=FAn, o por 150 gramos de queso untable descremado.
Las chauchas, que en algunos pa=EDses se llaman jud=EDas =
verdes, son ricas en vitamina A y resultan beneficiosas para los problemas =
de la piel. Aportan una buena cantidad de fibra. Adem=E1s, proveen =E1cido =
pantot=E9nico (vitamina B5), que es indispensable para el metabolismo de lo=
s hidratos de carbono, las grasas y las prote=EDnas y favorece la producci=
=F3n de hormonas. Por practicidad y prolijidad, conviene cortarlas con tije=
ra.
